Grown in tropical and subtropical climates, there are two varieties of lime. The Persian lime is eaten globally and enjoyed all year round. The Key lime is usually only found in gourmet products and readily accessible in Florida.
The lime is rarely consumed on its own and often used processed to enhance the flavour of various foods and beverages.
The Royal Navy used to feed to sailors a daily ration of limes to prevent scurvy.
