Differing in size, colour and taste there are hundreds of plum varieties. In general though the plum is divided into two categories: Japanese and European.
The European plum is bigger than the Japanese plum and is considered to have a sweeter taste. Japanese plums include the varieties greengage and Santa Rosa.
The dried plum, more commonly known as the prune is created by being exposed to an air tunnel that is heated by gas.
